Kambu Dosa Without Rice | Traditional Pearl Millet Dosa Recipe | கம்பு தோசை
Ingredients
- 1 cup Kambu (Pearl Millet)
- ¼ cup Urad Dal
- 1 teaspoon Fenugreek Seeds
- Salt to taste
- Water as required
Method
Step 1: Soaking
Wash the kambu separately. Wash the urad dal and fenugreek seeds together. Soak both for 6 to 8 hours.
Step 2: Grinding Urad Dal
Grind the soaked urad dal and fenugreek seeds together until the batter becomes smooth and fluffy. Transfer it to a large bowl.
Step 3: Grinding Kambu
Grind the soaked kambu in a mixer to a smooth batter, adding water as needed.
Step 4: Mixing
Add the kambu(Pearl Millet) batter to the urad dal batter. Add salt and mix well using your hand.
Step 5: Fermentation
Cover and leave the batter to ferment overnight or for 8–10 hours.
Step 6: Making Kambu Dosa
Heat a dosa tawa and lightly grease it. Pour a ladle of batter and spread it in a circular motion. Drizzle a little oil around the edges and cook until golden brown.
Serve hot with coconut chutney, tomato chutney, or sambar.

Mixing the batter by hand helps promote better fermentation and gives softer, tastier dosas.
